On the odd occasion this product might have to be despatched previously frozen. When this happens it cannot be refrozen. The duck is dispatched frozen, and defrosts en route to you. Consume within 24 hours after defrosting. Please make sure the duck is thoroughly defrosted before cooking.
Our ducks are sourced from traditional poultry farms, where the birds mature slowly at their own natural pace, on rich diets to yield the best meat. Duck breast is ideal for a mini-celebration as an interesting alternative to steak. Sear on both sides, scored skin down first to get fat flowing, continue to cook until skin is crispy and meat rosy. Rest before serving with rosti potatoes, sautÉed wild mushrooms, and a rich cranberry sauce.
