Ideal for all manner of dishes, our Minced Mutton boasts the standout flavour that sets our mutton apart, with a good ratio of fat to meat to give melting tenderness and real taste upon cooking. As such it’s a great introduction to just how good our heritage breed mutton is, often very hard to source, ours promises real character and depth of flavour by virtue of the rich pastures our flocks graze upon.

The Swaledale is the sheep of the Dales. They adorn the signs for the Yorkshire Dales National Park, and can be seen themselves wandering the wild stretches between the valleys in search of foraging. Ours mature slowly, at their own pace, on the heather that grows on the tops. This gives the meat a sweet as well as robust and almost herbal flavour, with the Swaledale providing some of Yorkshire’s most renowned lamb and mutton.

Tasting Notes: Robust, Complete, Herbal

Minced Mutton is a great alternative to that of Beef or Lamb. Any mince is regarded as a staple of a butcher's trade, but nowadays the focus is often making the mutton go as far as possible. Our approach is different, and hasn't changed for generations. The animals used are in their prime, grass fed, and sourced from small farms that produce consistent mutton, while the cuts used promise ample marbling and fat content for proper flavour and colouring. Our mutton brings you rich herbal flavours from the wild herbs and plants the sheep forage on.

This versatile Minced Mutton is big on taste, ideal for adding proper flavour and quality to dishes, and being wholesome and nutritious our mince is fantastic for everyday cooking. The strength of flavour works well with spiced from around the globe. Try using in your Shepherd's Pie with celeriac and juniper, making homemade gourmet burgers, or quickly frying before cooking long and slow with lamb stock and seasonal vegetables, and serving with Yorkshire Puddings.
