Taken from mature flocks of native breed sheep that have matured on wild pastures, this specialty is perfect for rich and robust slow cooks and curries. The deep flavour and character of the meat reflects the lush pastures our flocks graze upon, while the meat is expertly prepared into generous chunks of wholesome mutton.

Dark meat with plenty of character, this mutton is cut into generous chunks on the Butchers block for your home cooking. Ours is sourced direct from flocks left to graze in the near wilderness of the Eastern Dales, before being matured for 7 days in our dedicated dry aging room to tenderise the meat. Increasingly in demand, mutton is a key example of our mission to embrace forgotten butcher's practices.

A slow cooking favourite with a low heat serving to break down the rich meat and add to it delicious flavours. Try in a tagine, slow cooking with onion, garlic, tomatoes and mixed spice, and finishing with dried fruit and almonds. Alternatively this is particularly good served with cous cous or some crusty sourdough on a chilly evening.
