7 Days Dry-aged Wild Venison Medallions

Our venison medallions are cut from the striploin and make for tender, indulgent eats when simply flash fried and sliced. Sourced exclusively from wild deer, these steaks reflect the quality of our wild parkland venison and serves as an ideal introduction as to how good venison can be. Please note, as every wild deer is different, we measure by weight rather than number of medallions per pack.
The medallions are cut from the loin of the deer, otherwise known as the backstrap. This is the prime cut, yielding a rich finish, and is often to be found on specials boards for seasonal fine fining.
