Cairngorms Venison Kofta With North African Spices

Developed by our in-house Michelin Star chef Jeff Baker, our artisan Chef Prepared range fuses the perfect flavour combinations with our meat. This venison kofta is a delicious handmade pattie of wild venison, sourced from the Cairngorms National Park in Scotland, expertly infused with a blend of Moroccan spices to complement the natural flavour of the meat.
The heat from our special blend of harrisa paste with black pepper, garlic and mace is tempered by the zest of lemon and fresh coriander to create the characteristic flavoursome warmth of North African cuisine. Lean and quick to cook, these patties are a perfect mid-week meal.
Created through a chef- butcher collaboration, the venison is skillfully prepared to the perfect texture for the pattie. Then the fresh herbs and spices are expertly blended and combined with the minced venison, before being hand-pressed into small patties.
These naturally lean venison koftas flavoured with the distinctive spices of Morocco are quick to cook and perfect for a mid-week meal. Grill and serve with a red onion chutney and fresh salad for a lighter bite, or, for something more substantial, they pair perfectly with aromatic black lentils and coriander infused natural yoghurt.
