The Denver Steak is a hidden gem of a cut, taken from the muscle from the underblade portion of the chuck roll, it takes expert skill to remove. This exceptional cut sits directly underneath the shoulder blade bone, so does not get as much exercise as the surrounding muscles, so this is one of the most tender and flavoursome muscles in the beef chuck. The incredible marbling within this steak adds to the eating experience.
This steak is a hidden gem and one you really must try. Bring the steak to room temperature after removing from the pack and cook medium rare. When well rested this makes for the perfect economical treat. Serve with homemade fries, Béarnaise sauce and a dressed watercress salad. The marbling on this steak makes it an absolute pleasure to eat, and is affordable for dining any day of the week.
