The Shoulder Joint, also know as the Chuck Tender, a marvellous joint ideal for those who prefer their beef well marbled and succulent when cooked. It is seldom used, as it requires real Butchery skill to extract. The Beef Shoulder Joint is well suited to both roasting and long, slow cooking. Sourced exclusively from grass fed beef herds reared in the great outdoors to promise only the best flavour, our Shoulder Joints are only dispatched after being expertly dry age matured to relax the meat to tenderness, before being cut to order.
