Traditionally ox tongues are pressed for the boxing day table, so this year we have introduced our own version ready to eat. The tongues are salt cured for several days before being slow cooked in a rich & seasoned bone broth. The tongues are given a light lick of smoke before going to press in their own jelly in a Terrine mould. Thinly sliced & served with our F&Co hot English mustard this really is old school cooking at its best.
