Sourced exclusively from Yorkshire Large White pork, which is prized by butchers for its bacon, this is British bacon at its best, with rich flavour.
This bacon is cut from the back in the traditional manner and smoked over wood. In this instance, the smoking is the result of chef and butcher collaboration to determine the ideal level of smokiness so as not to over power but enhance the bacon’s natural flavour and the cooking it’s used in. As such this is a real artisan bacon, made with the finest Yorkshire pork for real quality.
