Through dry-aging for 45 days, the meat loses moisture naturally, relaxing the grains into tenderness and enhancing its exquisite flavour. The longer the beef matures, the more the flavour intensifies, so this cut is perfect if you prefer a stronger, deeper taste. The prime rib meat is left on the bone and untrimmed for maximum flavour.
