Since creating his stunning Lamb Guard of Honour on the Great British Menu, Tommy Banks has served our lamb at The Black Swan, Oldstead, Michelin Star winner and voted Best Restaurant in the World. The Heritage Lamb Guard of Honour is a visually stunning centrepiece that tastes as good as it looks. Skilfully hand prepared by an expert butcher, two rib racks of free range, heritage breed lamb are cut ready to be cooked separately and then interlinked before serving to create a standout roast.
This product can only be delivered between 4th December 2018 and 29th December 2018.
Known as Carré d'Agneau in French cuisine and butchery textbooks, the rib rack of lamb is expertly butchered at ninety degrees to leave the ribs intact with the prized rib meat attached. It’s then interlinked with another rack once cooked. The Guard of Honour is visually stunning and one of our favourite centrepieces to prepare.
A fantastic alternative to a conventional lamb roast, and ideal for smaller tables, the 7 Rib Lamb Rack showcases both the quality of our English lamb and our skilled artisan butchery. For a truly memorable meal, cook the 2 racks, then present so that the ribs interlock for a classic “Guard of Honour”. Serve with gratin Dauphinoise, baked carrots, and rosemary scented gravy.
