  1. Sweat the onions over medium heat in the butter until sweet, tender and lightly browned (this will take around 15 minutes).
  2. Add the flour and cook out over low heat to form a roux.
  3. Add the stock and thyme leaves then simmer until rich and glossy.
  4. Season with a splash of Henderson's relish or Worcester sauce.

To serve
