Fresh Mint Sauce

Ingredients

  • 16 mint leaves diced with a very sharp knife
  • Finely diced
  • 2 x finely diced shallots
  • 25milliliters lemon balsamic or a good sherry vinegar
  • 1tbsp unrefined sugar
  • Pinch Maldon sea salt

Introduction

Perfect with roast meats and dishes.

Method

  1. Simply mix the ingredients together 30 minutes or so before enjoying with your roast lamb or mutton.
