An ancient delicacy, visually stunning and perfect as a Christmas roasting joint. Suckling pigs promise rich, creamy meat, and are very easy to cook. Ours are sourced from an awarding winning farmer in Nidderdale, passionate about her pigs, they are reared ethically, outdoors. One of Britain’s most treasured heritage breeds, the Gloucestershire Old Spot owes its quality to the layer of fat which bastes the meat as it cooks and is a chef’s favourite for its herbal, classic and creamy taste.
On the odd occasion this product might have to be dispatched previously frozen. We will always advise you in advance if this is the case.
This Gloucestershire Old Spot is one of Britain’s most treasured heritage breeds. A West Country porker, this breed was traditionally fattened up on windfall from cider orchards giving the meat its sweet and creamy flavour and beautiful succulence. Very popular with chefs, its quality owes to the layer of fat on its meat which bastes the meat as it cooks, keeping the pork moist and tender with long in the mouth flavour.
Tasting Notes: Herbal, Classic, Creamy
Suckling Pigs are a European favourite, also featuring prominently in Spanish and French butchery. Ours are sourced from Old Spots for the best meat quality and very tender, flavoursome pork. They are then carefully prepared, removing the offal, and delivered fresh to your door, ready for home roasting.
A visually stunning centrepiece for Christmas and perfect for slow roasting. The key is to make sure the pig is well salted before cooking. Try stuffing the belly with aromatic vegetables to infuse the meat with extra aroma and flavour and serve with rich, buttery Granny Smith apple sauce to compliment the succulent meat.
