Cockerel is a tasty twist on festive poultry. The meat is succulent and full flavoured, deeper and richer than chicken, but lighter than goose. Reared naturally in the idyllic countryside of Harome up on the North York Moors, the birds are free to roam the fields whilst foraging from nature’s rich larder. These happy birds bring you the most succulent and rich meat. For optimum taste the meat is game hung to intensify the natural flavour of these carefully reared birds. Try pot roasting for ease with pancetta, garlic and herbs and serving with all the festive trimmings. Each bird comes with the giblets, for making a classic seasonal gravy.
These boys have been lovingly tended by Paul, the farmer, each day, from hatching to optimum maturity. The care that goes into this artisan approach to rearing can be tasted in the meat. It’s succulent and full of flavour that is only possible through natural, slow rearing.
Cockerel is a fabulous festive alternative to turkey. Rich and succulent, it’s smaller than a turkey, but larger in proportion to chicken with full flavoured character, a great option for 6 people. A tart red currant sauce perfectly complements the cockerel’s flavour.
