Ripon Cathedral Extra Cured Half Gammon

Developed by our in-house Michelin Star chef Jeff Baker and exclusive to Farmison & Co, this Chef Prepared speciality gammon is a limited edition. The gammon is marinaded in our festive recipe featuring muscovado sugar, seasonal spices and orange peel, it’s then cured for 3 months for a delicate and distinctive festive flavour. We recommend roasting the joint for a tasty ham, once cooked it will be the talk of the table. Expect ready to slice and succulent ham with wonderful depth of flavour.
This is a wonderful example of British charcuterie, combining outdoor reared Yorkshire Pig pork with expert dry curing techniques. The joint is cured by our Master Butcher in two stages. That is, dry cured first before being air dried for up to three months to concentrate and develop the gammon’s flavour, ready to be cooked at home for a fabulous festive ham.
We recommend slow roasting this joint, once cooked, the ham will be the talk of the table. It’s perfect for parties, buffets, or having on hand for the moment, heaven forbid, you need more food.
