Prince Charles runs a flock of organic Manx Loughton sheep on his Highgrove Estate in Tetbury in the Cotswolds. Farmison & Co have been working with their award-winning Master Curer on a limited edition cured leg of Highgrove Manx Loughton hogget. Hogget (12 months to 24 months old) is being embraced by discerning chefs, cooks and diners as it has a richer and stronger taste than lamb and is available all year round. A hit with charcuterie connoisseurs, this cured hogget leg is surely Britain’s answer to Spain’s pata negra or Italy’s prosciutto di Parma. The maturation begins with a fermentation cure to kick start the ageing process. With just the addition of an aromatic salt and fresh rosemary rub, the leg is matured for 10 months before being gently smoked over applewood. Each of the 16 legs is beautifully wrapped in fine muslin and hand-labelled.
