Prime muscles are taken from the top of the hind legs from Wild Scottish Red Deer. Expertly seam butchered, the lean meat is packed with flavour & the 'drunken rich fruits' work perfectly with such a rich & dark meat. The joint can be roasted pink or pot roasted with red wine & aromatic vegetables & spices. A brilliant alternative to a traditional roast beef dinner.
