Tomme de Savoie from the French Alps

A thick, grey rinded hard cheese from the Savoie region which is matured for 10 weeks. This length of maturity helps to create the wonderful complexity of flavours. Traditionally this cheese is made from winter milk when the cows are feeding off hay; the summer milk is used to produce Beaufort. As Tommes are traditionally made using skimmed milk after the cream for butter production has been removed they are generally low in fat (20-30%). Today however, wholemilk Tommes are not uncommon. The pate has a sticky but firm texture and a soft gentle, mild nutty taste. A naturally formed rind with a mild flavour that develops with age
