Taleggio by Award Winning Santi
The name of this cheese derives from the valley of the same name in the Province of Bergamo in Northern Italy and it is only allowed to be produced within 10 specific provinces to obtain its protected PDO status. Produced by Santi, this award-winning soft rind washed cheese, is made using locally sourced full fat unpasteurised cows milk. Matured on wooden boards for a minimum of 40 days and regularly washed in brine producing its distinctive pink and pungent rind. With an ivory white soft compact pate the taste is sweet, delicate, slightly sour and sometimes tangy.
