Rare Breed Ribs Don't Get Much Better - 24 March 2012

Spare ribs - granted not considered one of the prime cuts from these delightful Old Spot porkers - but you really could not be more wrong.

Loaded with delicious meat - this rack of prime ribs was loved by the whole family. Recommend you try this:

Pork Spare Ribs With Star Anise, Soy & Honey
(Serves 4 as a starter)

400/500g Old Spot Pork Spare Ribs
50ml dark soy sauce
50ml clear honey
4 star anise
25ml rice vinegar
50ml water
1 thumb peeled and sliced ginger

Pre heat and oven 160c (gas 3).

Mix all the ingredients together, soy, honey, vinegar, star anise, water and ginger. Marinade the ribs for minimum of 20 mins - the longer the better! Then in a medium oven and cook the ribs for 2 hours constantly basting until the meat is tender- serve as a starter.
