An incredibly tender and lean 'cylinder' shaped cut, taken from the loin.

A mini-joint with a nice little layer of fat on top, the canon joint boasts excellent eating quality, making it a real dinner party cut. Try serving with baked aubergine and a crumbled feta cheese.
