Sirloin Steak

A generous slice of melting sirloin with a thin cover of creamy fat.

Our signature steak demonstrates the merits of paying full attention to food providence. All of our sirloins are dry aged for a minimum of 28 days, taken from grass fed beasts that are allowed to mature at their own pace. The result is outstanding beef that can't be beaten for its deep flavour, dark flesh, and generous marbling that caramelises and tenderises the meat upon cooking.

Butcher's Block:
This is one of my favourite steaks to cut, which is a good job as they are so popular. When I was a lad, I was told the sirloin was named after a “Sir Loin” but it actually comes from the French “sur la longe” or above the loin. For me the sirloin best demonstrates the merits of using native breed meat as breeds like the Angus, Shorthorn, and many others, promise excellent marbling and taste that continental breeds just canít beat.

Chef's Tip:
This is my Saturday Night treat, and I would definitely recommend serving our sirloin steaks rare or medium rare for optimum taste and eating quality, and serving with home made chips and a Bordelaise sauce.
