Flat Iron Steak

Also Known As: Butler's Steak, Oyster Blade Steak, Top Blade Steak, Feather Steak

Cut from the shoulder blade, and also known as feather steak, this cut can be used as a stewing cut, but is equally at home cooked fast and rare, then thinly sliced and served with gratin dauphinoise.

Butcher's Block:
Flat Iron is actually an American name, but it's what I know this steak as due to its recent upsurge in popularity. It's cut with the grain, and taken from the shoulder to produce a less than tender steak, but with outstanding taste.

Chef's Tip:
This steak is enjoying a bit of a renaissance at the minute, and deservedly so. As good as any steak, this steak can be used for stewing, but if it was me I would cook them fast and rare, then serve thinly sliced with gratin dauphinoise.
