Our beef, selected from the finest heritage breeds in Britain today such as Dexter, Longhorn and Highland taste as beef used to 80 or more years ago, prior to the onset of intensive farming and animals being pumped on sacks of grain. Our beef, proudly developed on these Isles for excellent eating quality is grass fed for optimum flavour. It is hung (naturally dry-aged) in the time honoured way, which means it darkens, loses excess moisture and its grain relaxes into tenderness. The traditional customary marbling of healthy creamy fat throughout the flesh adds a further gurantee of memorable flavour.
